CLASSICS - SHAKEN

Southside - $20

Bombay dry gin, fresh lime, fresh mint, sugar

Named for the south side of Chicago where Al Capone and his cronies ran gin during prohibition. The gin on the north side of town was sweeter, whereas Capone’s gin needed the addition of lime and mint to make it palatable.

Clover Club - $20

Bombay dry gin, lillet blanc, fresh lemon, raspberry, egg white, sugar

This fruity, sour delight predates the prohibition itself, inking itself into the history books of the late 1800s. Grace your glass with this foamy miracle drink.

Prohibition Sour - $21

Four Pillars Negroni - $21

Four Pillars spiced negroni gin, Antica Formula sweet vermouth, Campari

Xavier the Barman’s drink of choice. Perfect at the start, middle or end of any Prohibition visit. Full of flavour, the negroni is a balance of sweetness & bitterness.

Old Fashioned - $21

Your choice of Buffalo Trace bourbon / Plantation pineapple rum, bitters and sugar

The first ever documented style of cocktail, the Old Fashioned is a winter warmer that has been around for generations.

Aviation - $21

Bombay dry gin, Luxardo maraschino liqueur, créme de violette, fresh lemon

Created in 1916 by New Yorker Hugo Ensslin, the Head Bartender of Hotel Wallick. The Aviation has a special place in our hearts, earning the title of “favourite” by our mixologist Elliot.

The Aperol Spritz is as refreshing as they come. Easy drinking, orange and bubbly, its a staple of the spritz family for a good reason.

Singapore Sling - $21

Bombay Dry gin, Dom Benedictine, Cointreau, cherry liqueur, fresh lime juice, raspberry, pineapple juice, Angostura bitters

Invented by bartender Ngiam Tong Boon, who was most famous for his work through Asia, but amongst his friends for getting them work at the renowned Long Bar, Singapore.

Dark 'N' Stormy - $19

Goslings black seal rum, ginger beer, fresh lime

Did you know that the Goslings rum company actually holds the copyright for the Dark ‘N’ Stormy cocktail and to be considered one has to be made with their famous black seal rum.

Choc & Hazelnut Espresso Martini - $21

Eristoff vodka, creme de cacao, Frangelico, Licor 43, fresh espresso

The espresso martini has been a staple of Australian cocktail culture for decades, maybe it’s time to shake things up.

Tommy's Margarita - $20

Espolon blanco tequila, fresh lime, agave, salt

This is the best version of a margarita there is. Warning! – it’s impossible to only consume one, they are just far too good!

Corpse Reviver #2 - $20

Bombay Dry gin, Cointreau, Lillet Blanc, fresh lemon, green fairy absinthe

Beware – four of these taken in quick succession is sure to unrevive the corpse again!

Mule 'De Cafe' - $20

Kahlua, Espolon blanco tequila, ginger beer, fresh lime

You would be forgiven if you thought tequila, coffee liqueur and ginger didn’t mix but never have you been so wrong!

Mojito - $20

Plantation 3 star rum, fresh mint, fresh lime, sugar, soda water

There is a prominent rumour that pirates played a large part in bringing the Mojito into vogue. The lime helped with the scurvy, and the alcohol helped with the soberness.

Earl Grey Marteani - $22

Earl Grey infused Tanqueray gin, lemon, sugar, eggwhite

First made in Pegu Club, New York by Audrey Saunders this signature amazingly well balanced cocktail is becoming one of our new house favourites!

Strawberry Daiquiri - $20

Plantation 3 star rum, lime juice, strawberry

This slight twist on an original daiquiri is just too good to skip, if you like a sweet colourful cocktail this one’s for you.
