Named for the south side of Chicago where Al Capone and his cronies ran gin during prohibition. The gin on the north side of town was sweeter, whereas Capone’s gin needed the addition of lime and mint to make it palatable.

Created in 1916 by New Yorker Hugo Ensslin, the Head Bartender of Hotel Wallick. The Aviation has a special place in our hearts, earning the title of “favourite” by our mixologist Elliot.
